I want to eat more meat free meals in 2017! We have had this before and you really don’t miss the meat I serve it with rigatoni as that is my fave pasta but of course would work with any!

Serves 4
You will need:
- 1 onion chopped
- 2 carrots, grated
- 2 tsp lazy garlic
- 200g sun dried tomatoes
- 800g passata
- 3 tbsp tomato puree
- 2 x 400g tins of green lentils (drained)
- pinch of salt and pepper
- 1 tsp basil
- 1 tsp oregano
- 1 bay leaf
- 400ml water
- 1 tsbp sugar
- Spray oil
Let’s Cook it!
- In a heavy based pan heat some spray oil on the hob, when hot add the onion, garlic and carrot and heat on low until starting to soften.
- Next add the rest of the ingredients, bring to the boil and simmer for 1 hour, stirring occasionally – you might need to add more water.
- When ready boil the pasta of your choice and serve.
