meatballs

So you may have guessed by now I don’t do fancy food. I do functional family food.

I haven’t got time to be chopping and dicing for hours and I know most of you haven’t got the time either. So I have been forced to learn how to cook tasty, speedy food! And this recipe fits the bill 100%

Serves 4

You will need: 

  • 24 ready made meatballs
  • 4 tbsp tomato purée
  • 1 chopped onion
  • 1 chopped red pepper
  • 2 tsp lazy garlic
  • 1 tsp Italian herbs
  • 1 cup white wine
  • 1 beef stock cube
  • 200 ml water
  • Salt and pepper to taste
  • 1 tsp sugar
  • 400g rigatoni

Let’s cook it!

  1. Bung everything in the slow cooker apart from the pasta and give it a good stir
  2. Turn the slow cooker to low and cooker for 6/7 hours
  3. When the meatballs are ready cook the pasta and serve
