As part of my Project Pick Me Up  I am making a massive effort to nourish myself better. This recipe tastes lush and is a fab lunch option!

Serves 1 

You will need: 

  • 1 tin of tuna (drained)
  • 1 tsp capers
  • 1 small handful of tarragon
  • 1 small handful of basil leaves
  • 1 anchovy
  • 1 tbsp olives
  • 1 tsp dijon mustard
  • Juice of half a lemon
  • 1 tbsp olive oil

Let’s Cook it! 

  1. Put all of the ingredients in a food processor and mix until you have the consistency you want.
  2. Serve on crisp breads with salad.
