Meal Plan: w/c 14th Jan

Happy Sunday TOMMers! How’s it all going? We have had a wonderfully relaxing weekend. Ben was sick at the end of last week so we have spent this weekend hunkered down at home, making sure that everyone is fighting fit for Monday!

Here is what we will be eating next week:

Sunday: Sunday Roast (slow cooker beef brisket, roast potatoes and Dairy Free Yorkshires)

Monday: Cottage Pie

Tuesday: Slow Cooker Meatballs

Wednesday: Slow Cooker Chicken

Place one whole chicken in the slow cooker with the seasoning of your choice – I use a lemon cut in half and 1 tsp 5 spice – cook on low for 8-10 hours (depending on the size of your chicken). You don’t need to add any liquid to this as it produces the base for a cracking gravy as it cooks. When the cooking time is over I add this to gravy made with granules. It will have a cracking flavour!

Thursday: Pesto Salmon with potato wedges and green beans.

Spread 1 tsp of pesto on each salmon fillet and cook according to packet instructions. Serve with potato wedges and green beans.

Friday: No Cook Friday

Saturday: Red Thai Prawn Curry with Jacket Potatoes
